Chocolate Truffle Cheesecake

Ingredients

Crust

  • 1 1/2 c chocolate wafer crumbs (about 27 wafers)
  • 2 T sugar
  • 1/4 c butter, melted

Filling

  • 1/4 cup semisweet chocolate chips
  • 1/4 cup heavy whipping cream
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1/3 cup baking cocoa
  • 3 large eggs, lightly beaten
  • 1 teaspoon vanilla extract

Topping

  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Directions

Crust

  1. Grease the pan.
  2. Combine wafer crumbs and sugar.
  3. Add butter.
  4. Press onto the bottom and 1 1/2 inches up the sides of the pan.
  5. Place pan on a baking sheet and bake at 350° for 10 minutes.
  6. Cool completely on a wire rack.
  7. Reduce oven to 325°.

Filling

  1. In a small saucepan, heat cream just to a boil.
  2. Add chocolate chips. Let stand 5 minutes, then stir until smooth.
  3. Beat cream cheese and sugar until smooth.
  4. Add cocoa and beat well.
  5. Add eggs and beat on low just until combined.
  6. Stir in vanilla and the melted chocolate mixture just until blended.
  7. Pour over crust. Put pan on baking sheet.
  8. Bake 45-50 minutes or until center is almost set.

Topping

  1. In a small heavy saucepan, heat cream just to a boil.
  2. Add chocolate chips. Let stand 5 minutes, then stir until smooth.
  3. Add vanilla.
  4. Spread over filling.
  5. Cool pan on a wire rack for 10 minutes.
  6. Run a knife around edge of pan to loosen.
  7. Cool 1 hour.
  8. Refrigerate overnight.
